Butterfly Pangasius is one of Vietnam's premium white fish products, highly favored in Japan, Europe, the UK, the US, and Australia.
The product is split lengthwise down the body, while keeping the belly intact – creating a butterfly-wing shape, hence the name Butterfly Pangasius.

Thanks to this special cutting style, the fish is easy to marinate, grill, or process into flavorful dishes while maintaining a firm meat texture, light fat content, and natural flavor.

The fish source is harvested from farms certified with GlobalG.A.P, ASC, BAP in Dong Thap and An Giang – the largest pangasius farming centers in Vietnam.
Only fish with a size of 800g–1.5kg, bright skin, thick meat, and even fat are qualified for Butterfly Pangasius export.
Slitting and Pre-processing Procedure
The fish is washed with ozonated water, removing the internal organs.
Use an automatic stainless steel knife to cut lengthwise, separating the two parts of the meat but keeping the belly connected.
Completely remove the main backbone, making the product easier to eat.
Adjust the size and shape to ensure uniformity before freezing.
After preliminary processing, the fish is IQF flash frozen at -40°C to preserve the meat texture and natural freshness.
The product is then vacuum-packed or packed in PE/PA trays, stored in a -18°C cold storage before export.

Countries such as Japan, South Korea, Singapore prefer IQF Butterfly Pangasius for grilled fish, teriyaki, or hot pot dishes.
In particular, the product is highly appreciated in Japan due to its bright meat color and slightly fatty taste, similar to cod.
Germany, Spain, the Netherlands, and the UK import Butterfly Pangasius for supermarket and restaurant chains.
Customers here require ASC and BRC certifications, along with environmentally friendly packaging and clear traceability, which Astra Aqua always meets.
In the US and Australia, Butterfly Pangasius is widely used in Asian restaurants, seafood stores, and ready-to-eat foods.
